KAZUE is deliberately small. With just a few seats and a counter in front of the chef, it offers an intimate Japanese experience where attention focuses almost entirely on the product and its preparation. Nigiri, sashimi and makis follow a traditional line, avoiding combinations overly adapted to Western sushi. Premium cuts like otoro appear within a proposal where freshness, temperature and balance have special importance. The omakase experience allows leaving the selection in the chef's hands and discovering a sequence of pieces explained and prepared in front of the diner according to the available fish. It is precisely its scale that makes KAZUE an especially BALAM direction: hidden, small and built around an experience that would be easy to overlook while walking through downtown Playa.
